With the holidays this year approaching fast, our stomachs are going to be in for it. In preparation, we like to give them a break with this healthy hummus dip. It's great for sandwiches, dipping veggies, and on pita or with chips. It's also very easy to make with a food processor or high powered blender. You can use any squash, or even something like sweet potatoes.
Ingredients
1 small squash or pumpkin
1 cup of chickpeas
1/2 cup of olive oil (possibly more)
1/2 clove garlic
3 tablespoons Tahini
2 teaspoons salt
1 lemon (zest + juice)
1. Roast peeled squash in oven until fully cooked.
2. Combine squash, chickpeas, lemon juice, tahini, salt and garlic in food processor. Process for 3-5 minutes.
3. Slowly begin drizzling in the olive oil while the machine is running. If you want a chunky texture, don't process as much. For a really smooth hummus, add more oil and run the machine until it's as smooth as you prefer.
4. Garnish with herbs, fresh spices, and olive oil.
